CHIA, HAZELNUT & ALMOND LOAF
This gluten free chia, hazelnut & almond loaf is perfect for when you are searching for knowledge, wisdom, and facts for a particular situation. It is perfect for a nourishing breakfast, snack or lunch.
Ingredients
- 1 cup arrowroot flour
- 1 cup almond meal
- 1 cup hazelnut meal
- 1/2 cup chia seeds
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- 2 tablespoons pumpkin seeds
- 2 tablespoons sunflower seeds
- 6 eggs
- 2 teaspoons apple cider vinegar
- 1 zucchini grated
- 2 tablespoon black olives, finley chopped
Instructions
1. Preheat the oven to 160 ° and line a bread loaf tin.
2. Combine the arrowroot flour,
hazelnut, almond meal, chia seeds, baking powder, salt and half the sunflower
and pumpkin seeds in a large bowl. In a separate bowl, whisk the eggs and apple
cider vinegar together. Stir in the zucchini and olives.
3. Combine the wet and dry
ingredients together to form a thick, wet dough. Pour the dough into the loaf
tin and sprinkle the remaining seeds on top, thinking of the issue that needs wisdom
or knowledge.
4. Bake for 1 hour, or until golden on top. Enjoy fresh from the oven or if you are
eating later, toast it under a grill. Serve with butter or your favourite toast
toppings. It will keep up to 5 days in an airtight container.

I love all the seeds in this bread. I have never heard of hazelnut meal so will have to look for this ingredient.
