Easy Gluten Free Pancakes

These super fluffy pancakes are so quick, easy and delicious! They are also satisfyingly filling thanks to the addition of protein-packed greek yogurt – a great way to work some extra nutrition into the most important meal of the day. These pancakes make a delish everyday breakfast and kids will love them!

Good old fashioned pancakes, a family favorite that brings back the very best memories of Sunday morning.

Pancakes are seriously my favorite. But not the kind that comes in a shaker bottle and is about 80% sugar. No thank you. What I love about this recipe is that it calls for a few simple ingredients you probably have in your kitchen right now. They’re naturally gluten-free too, and still fluffy and light.

They’re delicious. And we all love pancakes.

What you’ll need

Here’s a quick breakdown of what you will need (the full recipe with ingredient amounts is shared in the recipe below):

Oats: The base of these pancakes is made with gluten free rolled oats. This helps to make them thick and fluffy.

Greek Yogurt: I like to use Jalna Organic Whole Milk Yogurt. It adds in probiotic goodness, and a boost of protein and calcium. You can use whatever yogurt you’d like, but whole milk yogurt is best.

Sugar: We actually used liquid stevia and a tad of pure vanilla extract, but you could experiment with a bit of coconut sugar, honey or your preferred sweetener.

Baking Powder: Baking powder helps to makes them light and fluffy.

Salt: We like to use 1/4 teaspoon of Tasman sea salt to bring out the flavor in the pancakes.

Liquid: We stick to water to give the batter the right consistency. Alternatively use unsweetened nut milks or regular milk.

Unsalted Grass Fed Butter: You can’t beat butter or ghee for frying up pancakes, with coconut oil being your next best option. We used unsalted butter.

One Egg: The egg adds structure and helps with how light and fluffy they become.

Optional mix-ins: feel free to add in fruits, nut butters, dark chocolate chunks, or spices.

Some helpful tips

Always use room temperature ingredients! That includes eggs, water and the yogurt. I take my egg and yogurt out of the refrigerator 20 minutes before starting.

You can freeze ( for up to 3 months) the leftovers by cooling them and sealing them in a zip lock bag or cling wrap. When you’re ready to enjoy them, pop them into the microwave or toaster.

Ingredients

  • 2 cups rolled oats, gluten free

  • ½ cup whole milk yogurt

  • ½ cup water (or milk of choice)

  • 1 free range egg

  • 1 teaspoon vanilla extract

  • ½ tsp liquid stevia ( or 1 tablespoon sugar)

  • 2 teaspoons baking powder

  • ¼ teaspoon salt

  • Butter or coconut oil, for cooking

Instructions

  • Add all of the ingredients to a blender and blend on high until completely smooth, about 30 seconds.
  • Heat a large skillet or griddle on medium heat.
  • Once griddle is hot, grease with butter/oil. Pour ¼ cup of batter per pancake onto surface. Cook for 2-4 minutes until pancakes slightly puff up and you see some bubbles on the edges. Flip and cook the other side for 1 minute. Don’t let the pan get overly hot– if your pancakes are quickly burning, it means your pan is too hot.
  • Makes approx. 6 large pancakes. Serve with cinnamon, blueberries, nuts, dark chocolate and always a healthy drizzle of honey!
