Today I felt like making muffins for breakfast. Healthy muffins, the kind you can eat everyday. My version of healthy muffins included oatmeal, cinnamon, dates, carrots, apples, yogurt and delicious spices!
And they have seriously now become one of my favorite quick and easy recipes.
But are they really healthy?
They are loaded with good-for-you ingredients like oats, apples, carrot, honey and yogurt. Bonus of no inflammatory oils, refined sugar or gluten. Yep, you can feel great about eating them! They are light and satisfyingly good.
Spiced Breakfast MuffinsDifficulty: Easy
These delicious and healthy muffins loaded with good-for-you ingredients. They taste SO good you wouldn’t even know they are the healthy kind!
1 cup oat flour
1/4 cup greek yogurt
1 medium egg
1 tbsp. honey
1/2 carrot, grated
1/2 apple, grated
1 tsp vanilla extract (optional)
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp of each: cinnamon, ginger, nutmeg
2 dried dates
1/4 cup shredded coconut (optional)
- Preheat the oven to 180°C and grease your muffin tin for 4 muffins (I use silicon liners).
- In a large mixing bowl, combined and whisk the yogurt, honey and egg. Then add in the shredded carrot, apple, and vanilla.
- Add in the oat flour, baking soda, baking powder, salt and spices. Mix until combined. Add in the dates and coconut.
- Scoop the batter into the four prepared muffin cups. If you’d like, sprinkle a little extra oats onto the muffin for decoration. Bake for 15 minutes, or until golden on top.
